spicy salmon soba noodle
The spicy peanut sauce is the hero of this dish. It’s so yummy, you could drink it, although I recommend saving it for the meal! This is pretty much a 4 step meal: Boil the noodles, mix the sauce in the blender, roast your broccoli and cook your salmon. It’s so easy and truly delicious.
WHAT YOU’LL NEED:
Soba noodles or gluten-free pasta
2-4 Salmon fillets
2-3 crowns of organic broccoli
Sesame seeds - optional
Spicy Peanut Sauce - Mix together in a blender:
5 tbsps peanut butter
5 tbsps water
5 tbsps low sodium soy sauce
2 tbsps toasted sesame oil
2 tbsps honey
1 tbsp white vinegar
1- garlic gloves
1/2 half jalapeño
1/2 cup of unsalted peanuts
MAKE IT:
Arrange your broccoli florets, trimmed, onto a baking sheet and spray with avocado or olive oil and sprinkle with salt. Roast on 400 until cooked and fragrant, about 10-14 minutes, or air fry.
Boil your noodles according to the directions.
Mix your spicy peanut sauce ingredients in a blender.
Cook your salmon. I like to marinate this first in primal kitchen no soy teriyaki sauce, but you can also just drizzle a little fresh lemon juice and extra virgin olive oil on it. Or just add a little oil, salt and pepper. You can pan-cook it on a stove, medium heat, for 4-5 minutes per side (or more for thicker pieces). I put the salmon in my mini oven on broil for 12-16 minutes, depending on thickness, no need to flip sides.
Plate your noodles, salmon, and broccoli. Top with sesame seeds.
